Fireworks at the end of a lazy day!

Oh, what a beautiful morning is today and what a wonderful day was yesterday   Great food, great company, family, live music, fireworks show, all crammed into a bit under 12 hours.  Where to begin?  Ok, let’s try the beginning.

Our cousins Scott and Sharon joined us at the RV around 11:00am and they brought with them the makings of a wonderful meal.  Scott made Chilie Rellenos, and salsa while Sharon made a Jicama and Cantaloupe salad.  We got to use our new portable smoker to cook up the veggies by blistering them then Scott seasoned some chicken breasts and threw them in the smoker.  While all the food was cooking, we played a few games of Mexican Dominos.  It was quite windy outside, so we all had a hard time keeping our tiles from blowing over.  I think I am going to have to build some holders to take with us from now on.

Dinner was outstanding and there was not very much left at all.  Oh, I forgot to mention, Scott is an expert Sangria making.  He keeps changing his recipe each time and I think that’s to ensure no one can copy his creation.  Once we were all stuffed, we headed out to a local Ice Cream joint.  This place only does soft serve so while everyone had either a Sunday, milk shake or other creation, I had to work with them to make something more to my liking as far as size.  I asked them what the biggest container was they had, and it was a 24oz cup.  So, I said, fill it up please.  We had a good laugh since no one had ever asked for that before.  When they gave it to me, I saw right away there was a problem, there was lots of air in the cup and the ice cream did not go all the way to the top.  Hey, if I’m paying for 24 ounces then by gosh, I’m gonna get a full 24 ounces.  So, I tapped the cup on the counter a few times to settle the contents and then handed it back and said, very sweetly of course, fill’er up please.  Again, we shared a laugh, but I got my full 24 ounces!

Once all the ice cream had been consumed, we headed back to the trailer to take in the evening’s entertainment.  The Tico Time Resort where we are staying is trying to morph themselves into a major music venue and they seem to be working it well.  On stage tonight was a local country band.  They were ok, nothing to write home about, well other than writing about it here.  I think what we and the crowd, I’m guessing a couple of hundred people, were really waiting for was the fireworks show. 

When the band finished playing, we watched a couple of people carrying boxes up the Zip Line tower.  Seeing that my thought was, ok, they went to a local fireworks store and picked up a few things, so my expectations were quite low for the show.  Wow was I wrong.  The show lasted about 20 minutes and they were firing off the fireworks from 2 sides of the tower.  Sarah got some great photos of the show so you will see them below.

Today, we are heading over to Scott and Sharon’s for the day.  Sarah is making us some of her famous Biscuits and Gray and then Sharon is taking on dinner with a Lemon Ricotta Primavera Pasta.  So it will be a culinary day to be sure.  Between feasts, we are going to enjoy a movie or two in their home theater, (big screen with a ceiling mounted projector).  Then it will be back to the RV and get ready to head out to Salida, CO tomorrow.  Enjoy the photos.
